The PTS-600 plans will allow you to go as high as ~36" for testing, typical build uses the Ametek 115923 motors, the larger ones Lighthouse sells are taller and get close to the front motor chamber board so cooling is effected. You will see no gain in using those motors. The 600 bench would handle higher depression BUT you would have to undertake the cabinet build with that in mind.
I do have a set of plans for a bench that uses 12 motors, it requires a dedicated 75a 220v circuit. It's not a set of plans I advertise due to what Tony has discussed above with the safety factor involved with higher depressions. Typically, I discuss this with a builder so they understand what they are building and the power requirements.
Since I do not know everyone's skill levels for undertaking a flowbench construction I like to stay on the side of caution before supplying that set of plans as you can well understand.
