Just a quick update, I've actually made quite a bit of progress in the last few days. I put lots more time into the code, along with installing the 24x2 LCD.

Still not correcting for temperature, sensor is on the way. Ended up averaging the values on all 3 inputs to get a smoother result. CFM actually stays steady on the screen and i'm getting some repeatable results on the bench.

I still plan on using the raw A-D to do the pressure corrections eventually as suggested, might do that tomorrow night if possible. Calibration plates will probably have to wait till after xmas.
