Load cells all work in pretty much the same way. There are usually four strain gauge elements connected in a bridge circuit, with four external connecting wires connected to an external power source, and an amplifier:
Electrical output is always extremely low, usually only a few millivolts, and a very high quality amplifier and very stable power source for the bridge element are required. It is not the sort of thing you can successfully build yourself, unless you really know what you are doing.
A zero to ten volt full scale analog output is fairly standard for most commercial strain gauge amplifiers, so you should be o/k.
